Cookies on Sunday

Chocolate Espresso Oatmeal Cookies
Ingredients:

1/4 soy milk
1/4 canola oil
1 tablespoon cornstarch.
1/3 cup brown sugar
1 /4cup stevia
1 teaspoon vanilla extract
1/3 cup all purpose flour
1 teaspoon ground cinnamon
2 tablespoons instant espresso powder
1 tablespoon cocoa powder
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cups instant cooking oats
1/4 cup chocolate chips

Preheat oven to 350. In a bowl, mix soy milk, canola oil, cornstarch, brown sugar ,stevia and vanilla extract until smooth.

Sift in flour, cinnamon, espresso, cocoa, baking powder, salt, oats and chocolate chips until moist.

Spoon out teaspoon size drops of dough on cookie sheet. Bake for 14 mins. Makes 12 cookies.

    Hmm … Coffee, oats … sounds like a perfect excuse to eat these cookies for breakfast!

      I think this is sounding like a challenge! It’s Christmas break round here, so I am going to see if I can make a healthy version of a breakfast cookie.. But with chocolate!
