Cupcakes on Sunday

Gingerbread Cupcakes


1 1/4 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon all spice
1/4 teaspoon salt
1/2 cup vegetable oil
1/3 cup molasses
1/2 cup maple syrup
1/4 cup soy milk
2 tablespoons margarine
1 1/2 teaspoon vanilla extract
1/4 cup brown sugar

1/4 cup shortening
1/4 cup margarine
2 cups powdered sugar
2 teaspoon vanilla extract

Sift in flour, baking powder, baking soda, ground ginger, cinnamon, all spice and salt in bowl and mix. Whisk oil, molasses, syrup, milk and margarine on a separate bowl. Add the wet Ingredients to the flour mixture and stir until smooth. Fold in brown sugar.


Fill cupcakes liners two thirds full and bake at 350 for 20 mins. Let cool for and hour before icing. Makes 12 cupcakes.

Prepare icing
Cream shortening and margarine with mixer add powder sugar 1/2 cup at a time until smooth. Add vanilla extract and beat for 5 mins till fluffy. Pipe frosting onto cooled cupcakes.


Finally some decent weather!

Yesterday I decided to go to a spin class! I have been wanting to make it to a class at the gym for a while, but things were just not lining up! It was my first spin class in over 2 years, and I thought with all my running and exercising it was going to be a BREEZE! Well I was humbled for sure =/ level 16 was my “honest working level” as the instructor called it…and I had to WORK hard! My end result was somewhere around 430 calories burnt, 20km distance and as you see 53:00 minutes of sheer pain! I guess I need to do this more often!


Finally it has warmed up here in the city! -10 with the windchill but SUNNY! I went for a 7km run, and as you see, was quite sweaty when I got home. I saw other runners today, 3 to be exact! I have not “run” across anyone by my place while running in about 2 weeks!


This was the inside of my running jacket, the whole back was full of water…or sweat…I donno!


I seriously can’t believe my legs were working today after yesterdays spin class…by the way…my bum is SO sore!

After my run, a little later we all went to an outdoor rink! As you see, Parker wanted to sit in the chair instead of pushing it! Although, he did do some work ;)


I had this lettuce wrapped burger for dinner. The burger presents well, but was not that great. I found it really watery…


I am undecided if I will hit up another spin class tomorrow, I have to work at noon and the class starts at 10am. Mind you with that hour in between I may have enough time to go to the Running Room and pick up our Resolution Run race packages!

Okay seriously, I promise coffee does not normally affect me like this, but I had this GIANT mug of this french roast coffee ( a present from a dear friend).


This massive chocolate biscotti (sp??) was to DIE FOR!


I was so much that I picked up Adams guitar and was attempting to learn a thing or 2 today. Adam even face timed me from work to see if he could help me out because I was getting frustrated.


He also came home from work on his lunch break to help me learn the difference between chords and notes…


I am determined this coming year to play something…anything…just one song is all I want!! I am not greedy! I think my fingers are now telling me to just relax, it even hurts to type a little with my left hand!

SO today we officially wrapped up our Christmas waistline challenge!!
