Spaghetti Squash Fritters

I went on a beautiful long run in the valley with Ivan today.

The weather was cool and the train was icy/slushy really worked the calves.

After my the run I was feeling adventurous in the kitchen and made these bad boys.

Fritter 1 Nov 25

 

Spaghetti Squash Fritters

Ingredients:

  • 2 Tbs of Oil
  • ¼ cup flour
  • 2-3 cloves of garlic
  • About 1 ½ cups of cooked spaghetti squash
  • About 1/2 cup finely diced pepper
  • About ¼ cup finely diced sweet onion
  • Pinch of Chili Pepper
  • Salt & Pepper

Mix Oil and Flour together.

Fold the remaining ingredients and mix well.

Fritter 4 Nov 25

Heat a large  frying pan over medium high heat. Coat with oil. Using about ¼ cup of the batter, drop on the pan and flatten it a bit with a spatula.

Cook for about 3-5 minutes a side until the cake no longer sticks to the pan and becomes golden brown.
